Happy New Year!
Vegan party food is so great! For me, this NYE includes spring rolls, NW meatless meatballs, almond & cashew cheese, Wheat Thins and of course Champaign.
Life is good.
NW Meatless Meatballs
- 15 Vegan meatballs (I cheat and use premade vegan meatballs)
- 2 Tbl Blackberry jam
- ½ CupTeriyaki sauceBake meatless meatballs until cooked completely. While the meatless meatballs are cooking melt the blackberry jam in the Teriyaki sauce over medium heat. After the meatballs are done add to the Teriyaki sauce stiring to coat completely. Cover and cook on low heat for 15 minutes, stirring often.
Almond and Cashew Cheese
I modified the recipe in The Ultimate Uncheese Cookbook for Incredible Almond Crème Cheez by adding ¼ raw cashews to the recipe. I did not reduce the ¼ cup of almonds and the cheese was still very creamy.
I hope that 2012 brings awareness to those who still use animals, peace to those beings suffering, and a new understanding of compassion that includes all feeling beings. Happy New Year to all.

The mom decided to come into the picture and is trying to get him back. It’s been 2.5 months now since he was legally placed with us and she’s failed all her drug tests since then and hasn’t completed any of her case plan. She has until August, so we’ll see I guess.
If she gets him back, then at least she’ll have to be clean, have gone through drug classes and counseling as well as parenting classes.
Hoping for the best. Thanks for asking.

Izzy, I can’t imagine how stressful this must be for you and your husband. You are doing such a wonderful, wonderful thing. You might be surprised at how many people would just look the other way and let the mom take the baby back even knowing it is not the best for the baby. Believe me, I know. In my family looking the other way became an art form.
I’ll be thinking about you guys and sending all my best thoughts, energy, and hope!
